It uses both gas and wood or charcoal for that delicious smoke flavor. This unit is the FLSE model which includes part of the smoke extraction system(flue) at the top. One for loading the smoker and another door which opens at the same time on the back of the pit so the smoke will exit the pit instead of getting in your eyes. I have used this cooker about 4-5 times and it will cook the juciest meat you have ever seen or tasted. For your consideration is a custom made charcoal gravity fed rotisserie convection smoker. It is a one of a kind made to use in competition bbq circuit and has many trophies to show for it. There were over a 100 hours of shop time in the fabrication of this unit and it is built well enough to use in a restaurant day in and day out. And now for the features. Has 4 rotating removable racks that are 12 wide and 52 inches long. Each rack will hold 2 full size and 1 1/2 pan disposable pans. This gives you the capacity to put 6-7 10lb pork buts per rack. 7 X 4 = 28 butts per cooking. Three whole packer brisket for 12 briskets per load. Rotisserie is done with a Dayton gear reduction motor. Drive is done with a chain to jackshaft and a v belt to the motor. If a rack hangs up the belt will flip off without hurting motor. I have for sale a Southern Pride BBR-79-SE on an roofed over trailer with a rear porch area. I have owned this since 2009 and really enjoyed having it. Due to health issues I am selling as I will not be able to use. It is rated at 700 lbs of pork butts but several times I have had 800+ lbs of butts on it. It is in overall good used condition.
