Turn kettle temperature control to#10 to boil water. Then add rice and bring back to a boil. Turn dial to#4, cover kettle and simmer for 20 minutes. Empty cooked rice into large colander and drain if necessary. For brown rice: after adding rice to boiling water, turn dial to#4. Cover and simmer for 40 minutes. Pasta. Noodles, spaghetti, macaroni: Turn kettle temperature dial to#10 to boil water. This is a KDL 60T Cleveland 60 gallon steam kettle. 50PSI. We have been using it to make jams& jellies for the last 5 years but have upgraded to a 100 gallon recently so I no longer have need of this one. It works good and is in good shape except we bent the front scoop portion down(top front of kettle as seen in photo) because we leaned over the edge to hand scoop rather than using the tilting feature of the kettle. The tilt still works great. We just didn't need it for our application. Most of the specs should be visible in the second photo but if you have further questions please feel free to ask. You are welcome to line up your own freight or I can help with that and add the freight to your invoice.
