Removed from restaurant and tested to see it is working. Jacket heated up quick and thermostat maintained temperature. Looks like the water in the jacket could use changing as the water looks a little cloudy in the sight glass tube. This unit is wired for single phase 208V but can be wired for 3 phase operation. Kettle was tested briefly to be sure it was working properly. I have not used this item myself beyond the brief testing. The operation of this kettle is pretty straightforward and I do not see any flaws with the unit. This unit is dated 1994. Virginia residents add 5.3% for sales tax.
