Nichrome wire increases in resistance a little as the temperature increases and nichrome 80 changes less than nichrome 60 so is more applicable for resistors in electronics. The 80 also has a slightly higher melting temperature and maximium operating tempreature. Since nichrome 80 has no iron, some prefer it for vaping.
