Corn dogs, chicken breasts, and other food items that the cook does not want to float to the surface when done. They can be use separately or with one on top of the other. I do not see exactly the same product in the Hubert food service catalog. But similar ones sell in the range of $39.99 to $89.99. Plus shipping. These were used in a catering business.
