We did our best to preserve the original look of the airstream while adhering to the NSF board of health guidlines. The trailer was licensed in the state of ct as a commercial bakery and licensed in the city of Danbury. Ct as a vending"truck" and commercial kitchen(2012) We have grown into a permanent location and are no longer using the trailer. We had three people at a time working in the trailer with plenty of space. There is stainless counter space in the front and the back of the trailer by the three bay sink, an espresso machine area with its own small refridgerator. There is a larger NSF fridge for ingredients. The oven is a rockstar.a Blogett half sheet, six rack convection ... moreoven, which is vented(fire marshal approved) and runs off the trailers propane tanks.
