Vintage Carbon Steel Sabatier 10" Chef's Knife "Chef Ritz" marked Paris, France
10" blade. Hi-carbon steel, rosewood handle held with brass rivets, handle solid& sound, blade shows spots of dark staining and some areas of etching, in particular, the front 4" or so of the right side, very sharp and quite serviceable, holds a better, sharper edge longer than Stainless but bear in mind a carbon blade needs TLC to prevent rust. Very nice vintage French Sabatier chefs knive imported and sold by the Bazar Francais of New York. Knife is in very good condition for its age. High carbon steel blade is marked" BAZAR FRANCAIS NEW YORK and FRANCE" Handle is marked SABATIER. Blade does not look to me like it has ever been sharpend and will need a good working edge put on it. Handle has no cracks and is as tight as the day this knife was made. The blade should polish up very nice I think if the new owner wished to do so. Take a look at the pictures and judge condition for yourself. The Bazar Francais was a store that imported and sold high end kitchen ware. Store was located at 666 6th ave New York. The knife has been used and sharpened. There is some discoloration on the blade. But no rust. There are some small nicks on the blade that can be seen in the pictures. Wow! This French Chef's chopping knife is from the Bazar Series. It is the ultimate in perfection that's demanded by the top chefs as the blade is hand forged from the highest quality carbon steel. The total length of the knife is 19 1/2" and the actual blade is 14 1/4" long and is 2 3/4" wide at the hilt The writing on the blade is very small and difficult to photograph but it says"Real Sabatier Bazar Francais Made in France" It is in excellent condition having no damage and little if any signs of use. Here's a genuine old Sabatier Trumpet small chef's knife made in France. Measures 10" overall with the blade being 6" Forged one piece blade. Ferrule& tang make for a very strong knife. Beech hardwood handles secured by heavy brass cutlers rivets. Some minor dings in the wood from decades of use. Hard to tell exactly how old this is but I'm guessing 1920's or so. For auction is a very nice. Vintage, Sabatier Lion 12" Scalloped Blade Carving Slicing Knife, 16-3/4" Long Overall! Huge! Made in France. Blade is stainless steel. Semi-flexible, 2/3 tang style. With three brass rivets. Blade is sharp and straight. No gouges, chips or cracks. Tip is good. The blade does have some typical. But minor marks. Some minor edge marks from previous sharpening. Some micro scratches from drawer storage. I have not sharpened or cleaned the blade. Handles are very clean. No cracks. Just some typical wear and use indications. Please note. The total length of blade measured at sharpened edge is approx 11-3/4" Overall length of knife is 16-3/4" Blade measures 1/16" thick at top of heel and 3/64" about 1" from point.
