Sabatier Jeune (Crown) 12 1/2" OAL Looks Unused Tapered Tang Grape Leaves Chef
You are bidding on a beaut of a chef's Sabatier 12 1'2" OAL. It looks to be unused. I see no signs of sharpening or use. Much of the original mint luster is visible though the blade is discolored on both sides. Blade stamp reads: Sabatier Jeune Garanti(grape leaves) crown) made in France. This is an early forged knife. One piece construction, tapered tang with wood handles held down by three Brass birds eye rivets. The handle has the grape bundle symbol burned in with some of the gold leaf remaining. This is a beautiful vintage piece of exceptional quality. Made in France by Sabatier and imported to this country for exclusive sale by the old Hoffritz cutlery stores. It's unusual in the fact it's one of the largest steels imported to this country from France, and one of the largest French pieces of this size you're likely to come across. It was made in the 1970's in a style and size ONLY sold as open stock. Not in complete sets. Measures a whopping 17-5/8" long with a very heavy-duty, hardened and magnetized 12.25" rod which was forged integrally with its handle and lanyard ring, which was made to accept apron strings so a user could wear it at his waist, as was the European custom for butchers and chefs. Antique Hand Forged Lacroix Fils 12" Chef Knife Thiers, France c 1900 Sabatier
For your consideration today is a rare A. Lacroix hand-forged chef knife with walnut handle. Circa 1900. This knife originates in the Thiers region of central France and were frequently and collectively referred to as"Sabatier Knives" and sold as"Sabatier Line" knives, though they had little to do with the original Sabatier family of knife makers other than the fact that they also came from Thiers. This knife measures just over 12" and the blade is razor sharp. You can see sharpener marks along the blade and there's a small notch mark to the handle, but it is a very clean and sturdy knife otherwise. The"Cuisinier courant un enorme couteau" chef running with a big knife" trademark originated Jan. 1898 and this knife is guaranteed to be from that period.
